Domaine Pignier
One of the few wine producing domaines left in the small village of Montaigu in the southern part of the Jura in France. They have been practicing organic and biodynamic farming since the late 1990s.
Location: France
Fabrice studied enology in Beaune before fine tuning his skills as a winemaker at the Cooperative of Pupillin. He started working at Domaine de Saint Pierre in 1989 as a manager and took full control in 2011. The Domaine achieved organic certification in 2012, having started conversion in 2002. In recent years, due to lesser crops in Jura caused by spring frosts, Fabrice has expanded his horizons to include purchasing grapes from friends both in the Jura and from other regions; the project is called Le Dos d’Chat and is a series of easier wines made by that show a light touch with good sense of wine-making. All wines, both domaine and negoce are fermented with native yeasts either in tank or neutral barriques.

Chiara comes from a family of winemakers, so the urge to produce wines runs in her blood. Her first vintage was in 2015, and she now owns 7 hectares in Emilia-Romagna (the Romagna side) where she makes two different and absolutely amazing wines on Sangiovese.
Tenth generation vigneron Fabien Cazé works an isolated 2,5 hectares of his family’s vineyards for his own small and ambitious project under the label Champagne Cazé-Thibaut.
