Frédéric Savart

Location: France

The Savart estate is located 10 kilometers west of Reims, at Ecueil near Montagne de Reims. Here, Frederic has taken over his father’s vineyard consisting of 4ha of Pinot Noir and a touch of Chardonnay. His philosophy in the vineyards is to prevent disease as much as possible, rather than treat it. He prefers a holistic approach, creating an environment within which the plant is better equipped to resist malady on its own. The soils in this area varies quite a lot; many parcels in Ecueil are notably sandy, although there’s more clay on the mid-slope, and a few areas that are relatively chalky. 

While most of the wines ferments in steel and carry a rather “straight” expression, the style of Frederic´s wines are a incredibly balanced expression of said straightness and freshness with complex and rich flavor profiles. All in all stunning wines that unfortunately are minimal in quantities.

Domaine Robert Groffier

Considered one of the best producers in the Côte de Nuits (which means Burgundy, which means the rest of the world). Robert established the domaine in the 1930s, buying fabled vineyards in Bonnes Mares, Chambertin Clos de Bèze and Chambolle-Musigny Les Amoureuses (the biggest single owner of this vineyard), and became famous for making ultra precise and delicate Pinot Noirs that have no apparent comparison outside of Burgundy.

Domaine Bonneau du Martray

Wines that are difficult to describe and difficult to obtain. The story goes that Emperor Charlemange donated the area to the Abbey of Saulieu in the year 775, and its boundaries have remained in place ever since. It is also the story that the Emperor’s wife convinced him that white grapes were preferable to red to save his beard from being stained.
