Four generations of Boillots assembled some of Burgundy's finest old-vine sites, and in 2002 Louis Boillot brought them together under his own label, spanning Gevrey-Chambertin in the Côte de Nuits and Volnay in the Côte de Beaune. The approach is refreshingly hands-off: old vines left to speak for themselves, fruit destalked, wines bottled unfined and unfiltered. Son Clément now steers the cellar while Louis tends the vines.
