A delightful meeting of two worlds: Morgane Seuillot of Burgundy and Christian Knott of Australia, who tend a tiny patch of old-vine Aligoté, Pinot Noir and Gamay in the Hautes Côtes de Beaune. Everything here is done by hand or by horse, farmed organically with biodynamic leanings, with nothing added and nothing taken away. A darling of the natural-wine set, and produced in such small quantities that catching a bottle is half the fun.
