Tenth generation vigneron Fabien Cazé works an isolated 2.5 hectares of his family’s vineyards for his own small and ambitious project dubbed: Champagne Cazé-Thibaut. With a hands-on approach in the vineyards (certified organic since 2018), and a hands-off approach in his underground cave (slow and cold native yeast fermentations), Fabien is producing precise, terroir-transparent wines. A recent inductee into the prestigious and progressive group of Champenois known as Terre et Vins, Fabien is developing a following that will undoubtedly grow and strengthen in the years to come.
