Tenth generation vigneron Fabien Cazé works an isolated 2,5 hectares of his family’s vineyards for his own small and ambitious project under the label Champagne Cazé-Thibaut. With a hands-on approach in the vineyards (certified organic since 2018), and a hands-off approach in his underground cave (slow and cold native yeast fermentations), Fabien is producing precise, terroir-transparent wines from the villages of Châtillon-sur-Marne and Vandières on the western side of the Vallée de la Marne. A recent inductee into the prestigious and progressive group of Champenois known as Terre et Vins, Fabien is developing a following that will grow and strengthen in the years to come.
We use the phrase “rising star” quite often these days, but never has it rung more true than with Fabien. It will be an absolute pleasure to work along side him and his wines for the foreseeable future.
