Le Dos d'chat is the gluggable side-project of Fabrice Dodane of Domaine de Saint Pierre in the Jura, born of necessity after hail and frost thinned his own crop. Working with fruit from friends farming to his own exacting, low-intervention standards, he turns out whole-cluster, barely-sulphured wines from the likes of Poulsard, Trousseau, Chardonnay and Gamay. Joyful, thirst-quenching and deeply Jura.
