A New York restaurant career gave Laurent Saillard his taste for natural wine, and Touraine gave him the chance to make it. He learned the craft alongside Clos Roche Blanche and Noëlla Morantin before taking on a slice of those very vines, and today works around six hectares from a centenarian cellar in the village of Pouillé. Expect bright, easy-going bottlings from Loire natives like Sauvignon Blanc, Pineau d'Aunis and Grolleau.
