In the historic Jura village of Arbois, Fabrice Dodane crafts some of the region's most quietly compelling wines. Winemaker here since 1989 and owner since 2011, he farms organically (certified) and works with native yeasts and barely a whisper of sulphur, coaxing pure, transparent expressions of site that have become darlings of the natural-wine world.
