In the village of Celles-sur-Ource, in the southernmost Côte des Bar, Thibaud Brocard is the fifth generation to tend the family vines, the house carrying the name of his father, Pierre. Since taking over in 2012 he has converted the vineyards to organic farming and vinifies each of his parcels separately, making mostly single-variety vintage Champagnes with very little added sulphur. The style is honest and terroir-led, with long ageing on the lees.
