Up on Puglia's breezy Murge plateau near Gioia del Colle, Cristiano Guttarolo has farmed naturally since 2004, starting from the small parcel his grandfather left him. Indigenous varieties like Primitivo, Susumaniello, Negroamaro and Verdeca grow over fossil-rich limestone, then ferment with wild yeasts and nothing added in the cellar, no sulphites included. The wines are pure, unforced and surprisingly elegant for the warm south.
